Down South, this is called a “hoecake,” because it used to be cooked over an open fire, outdoors, on the flat metal end of said implement.
They’re generally eaten along with cooked vegetables, especially turnip greens or collard greens (winter vegetables), on a cold day. In the summer, with fresh string beans or field peas, and sliced tomatoes.
The sinful among us sometimes butter them, even though they’re cooked in hot oil.
