Wow that was some *Upset!*
I just "ate" my new addiction: 1% Chocolate Milk by T G Lee Dairy. And a homemade Oatmeal cookie my friend's mother gave me. I spit out the raisins, I confess!

That crow is not as hard to stomach now, not with the sweet taste of victory with Kansas State advancing to the Elite Eight. To celebrate, Outback Steakhouse ribeye and aussie fries. (Good luck tonight, Baylor. Go Big 12!)

Well, since you asked : I had whole wheat bread with Smart balance mayo, black pepper, and a steamed Gardenburger Veggie Portabella pattie tucked between the two slices. It was my full supper. I had water with it. I am contemplating a peanut butter (Laura Scudders crunchy oil top) and strawberry preserves sandwich for dessert. However, (to quote Alfred Hitchcock) I am convinced that I do not need it just before heading to bed.

Update. Having weird food allergies. Silent acid reflux. I have to watch what I eat, or risk a choking attack. This is a new one on me. Not GERD, but spasms in my throat if I eat certain things. Never had it this badly. I ate a piece of burnt toast with overly sweet preserves. Managed okay. I am craving sauteed garlic over rice. Or portabellas....on the end of a fork.
Okay. Last thing : lettuce with Bob's Big Boy bleu cheese dressing. Probably shouldn't have anything with milk, but.....I have the hungries.

On Sunday night I had king prawns and green peppers in black bean sauce and shrimp chow mein. I can't seem to get enough of Chinese food at the moment.
The last thing I ate was a chocolate muffin and now I want to eat something savoury, so back to the kitchen.

Blue corn pancakes with King Syrup. I added regular flour to the blue cornmeal flour, baking powder, water, pinch salt. Oh. Delicious. No milk, egg, or butter. Sounds like Johnny cakes, but I will call these Juanny cakes. (In honor of the Juan Valdez coffee I had with them)

I cooked a Chinese style meal for myself and my Dad tonight. Chicken, water chestnuts and bamboo shoots in a chow mein sauce with noodles and boiled potatoes.
Then about an hour ago I had a Crunchie bar.

For dinner tonight I had a cube steak, sliced tomatoes, beef Rice-A-Roni, corn and a dessert made from mixing cool whip, cottage cheese and Jello powder. And of course lots of ice water.

Egg salad with safflower mayo, and Guldens mustard topping. And some multicolored chunked peppermill pepper. A small glass of water. I don't normally eat too many eggs, but these are free range.

People's summertime gardens are really "coming in" around here, with lots of sharing.
Friends have supplied fresh tomatoes and peas (not English peas, or black-eyed, but ones that taste and look like lady peas {pale green when cooked}, only larger).
Stewed a bunch of tomatoes (with some olive oil, salt, and sugar) to have over the peas (seasoned with chicken bullion cubes and olive oil) with rice and cornbread. So, so good and have been eating this for days. One of my brothers supplied a bunch of fresh corn. Shucked it, cut it off the cob, then ran an immersion blender through the kernels to cream them. Cook in shallow pan, or frying pan, with butter, salt, and sugar to taste. About 10 minutes. Wow!
Now, the main reason I wanted to respond, in ref to Steve's dessert:
You can make a really light, quick "summer cake" by baking a yellow cake mix in a 9X13 pan and frosting it with a mixture of Cool Whip (one regular sized tub), one box vanilla pudding, and one can crushed pineapple. Keep in refrigerator, of course.
Then, there's the ever-popular mix of one tub of Cool Whip, one can of crushed pineapple, one box of pistachio pudding, and one small bag of minimarshmallows. Refrigerate, of course, and good with your favorite cracker.
