Just for fun, let's toss this around. If Lizzie would have gone to college, what do you think she would have majored in? Teaching, nursing, or something outrageous?
I think maybe she would have been a teacher, she did like kids. Also maybe she would have worked in a school that was a private religous school, since she was involved in church.
I even wander if she was involved with womens right to vote. Seems like that might be up her ally.

With all sensible logic aside, let's say Lizzie did have an interest to attend college, which would have been in the early 1880s.
Although it's highly unlikey she would have attended, in theory I believe she would have studied Art History.

LIZZIE BORDEN'S THEME SONG
(to the tune of Green Acres)
Fall River is the place to be,
city living is the life for me.
Bought a nicer house,
so big and wide!
Forget 92 Second Street,
that's where I was charged with homicide!

The best course of studies for a future heiress in the 1880s was double-entry bookkeeping or accounting, to manage the family fortunes and avoid another "Joseph Carpenter" incident.
Nowadays, the best course for an heir/heiress is LAW. Law is about property, and a lawyer could understand and manage the people who worked for him/her. There is also client confidentiality.
