Pastry for (10") crust
2 packages (3 oz. each) cream cheese
1 egg lightly beaten
3 tablesspoons of sugar
1/2 teaspoon of lemon juice
2 cans (16 oz. each or 1 can (29 oz.) of sliced fruit, (peaches, pears, pineapple, apricots, whole figs, Mandarin oranges (best!)
3/4 cup of liquid from canned fruit
2 teaspoons cornstarch
1/4 cup of red currant or strawberry jelly
Fit pastry into 10" flan pan/pie plate. Bake at 400F. 13-15 minutes. Cool. Reduce oven to 350F, Cream together cream cheese, egg, sugar and lemon juice; spread over baked crust. Bake at 35F. 5-7 minutes. Cool for 5 minutes. Arrange drained fruit atop cheese mixture. Combine fruit liquid and cornstarch in seperate saucepan. Cook until mixture boils and thickens, add jelly and stir until melted. Spoon over fruit. Refrigerate.
