Recipe

Here is that Fruit Flan recipe I told you about, Susan. You got to try this:


Pastry for (10") crust
2 packages (3 oz. each) cream cheese
1 egg lightly beaten
3 tablesspoons of sugar
1/2 teaspoon of lemon juice
2 cans (16 oz. each or 1 can (29 oz.) of sliced fruit, (peaches, pears, pineapple, apricots, whole figs, Mandarin oranges (best!)
3/4 cup of liquid from canned fruit
2 teaspoons cornstarch
1/4 cup of red currant or strawberry jelly

Fit pastry into 10" flan pan/pie plate. Bake at 400F. 13-15 minutes. Cool. Reduce oven to 350F, Cream together cream cheese, egg, sugar and lemon juice; spread over baked crust. Bake at 35F. 5-7 minutes. Cool for 5 minutes. Arrange drained fruit atop cheese mixture. Combine fruit liquid and cornstarch in seperate saucepan. Cook until mixture boils and thickens, add jelly and stir until melted. Spoon over fruit. Refrigerate. :grin:

Oooo, that sounds really good, Steve, thanks for the recipe! I'm cooking this year for Christmas and need to get a couple of desserts together. I'll see if I can wheedle the peanut butter pie recipe out of my future mother-in-law for you, if you like peanut butter, its to die for! :grin:

Yes, if you can get that recipe please post it for us, Susan. I love peanut butter. :grin:

I like Manderine oranges best in the Flan but any fruit works good. Let me know what you think of it. When I was growing up my Mom and her Mom did a lot of Holiday cooking. That was the best eating I ever did!
